Day 1 - My Favorite Song

I don't really have just one favorite song. It often changes depending on the day, mood I'm in or what's going on in my life at the time. However, no matter what, anything by this man always makes the list. LOVE HIM!!!!!

Monday Bites!


Found this recipe on http://www.make-it-do.com after a friend requested a peanut butter treat for Sunday night. It was SUPER yummy! I did the recipe 1 1/2 times so that it would fit in a cookie sheet, but doing it regular would make plenty. Here is the recipe. Enjoy!

Lip Smackin’ Peanut Butter Bars
3/4 cup butter
3/4 cup brown sugar
3/4 cup sugar
3/4 cup peanut butter
2 eggs
1 tsp. vanilla
3/4 tsp. soda
1/2 tsp. salt
1 -1/2 cups flour
1 -1/2 cups oatmeal

FOR THE TOPPING:
¾ cups Peanut Butter
1 cup Granulated Sugar
½ cups Evaporated Milk
5 Tablespoons Butter
1 cup Milk Chocolate Chips
Preheat oven to 350 degrees.

In a large mixing bowl, cream together butter, brown sugar, granulated sugar and peanut butter. Add eggs and vanilla. Add soda and salt and mix until well blended. Add flour slowly, making sure it’s incorporated, but do not overmix. Stir in oatmeal by hand.

Spray a 15 x 10 jelly roll pan with nonstick cooking spray. Spread mixture in a pan. (I wet my hand slightly and press the mixture evenly.) Cook at 350 degrees for 12 – 15 minutes until golden brown.

Remove from oven and immediately drop peanut butter (from the topping ingredient list) by teaspoonfuls evenly around the top. Allow to melt and spread smooth with a spatula.

Allow to cool thoroughly.

In a small saucepan, bring sugar, evaporated milk, and butter to a full boil for 45 seconds. Remove from the heat and add the milk chocolate chips. Whisk until chocolate sauce is smooth. Pour evenly over bars and allow to set before cutting and serving.

It Just Keeps Getting Better!

I may be in love with the Hallmark Channel. Seriously, who can resist their countdown to Christmas, happy endings, and cheesy (but oh so lovely) movies that are on pretty much NONSTOP! Then today I heard about this little GEM, COUNTDOWN TO VALENTINE'S DAY!!!! I love myself a good love movie and I sure do love Valentine's Day! You know where to find me February 1-14th!

What I'm Loving - January 2011 Edition!

I am determined that 2011 will be a better year then 2010 was. Here is a little glimpse of what I'm loving so far in 2011!

Yoga Pants - No I don't do yoga, but seriously the MOST comfortable pants ever. I pretty much live in them.

Cocomotion - If you like hot chocolate and don't know what this is, you are missing out.

Books - I am a reader all year, but when it is WAY to cold to do anything outside I love having even more time to cuddle up with a blanket and a book (of course in my yoga pants). Melody Carlson seems to be the author I'm into at the moment.

New episodes of my favorite TV shows - Grey's Anatomy, Brothers and Sisters, Biggest Loser, The Office. Enough said.

This song - Pretty much sums up last year. I am totally stronger now!



The Seahawks - the best football play/game EVER! Let's hear it for football playoffs. You know I'll be watching.
